So, on our way toward Memphis, we do the first extracurricular BBQ excursion. Most everyone acknowledges that to do true BBQ in the south, you need to avoid the glitzy trendy places you read about in New Yorker magazine - you need to get out into the countryside and find the real thing, not the trendy thing. We found Helen’s BBQ....”mah husband’s been lightin’ my cookin’ pit fire at 5:00am every mornin’ for 17 years, before he goes to work.” When she asked where we were from (and we answered), she got out “her book”, and had us sign it. Seriously good ‘Q. We ate it on the lamp table of our luxurious Comfort Inn, in Brownsville, Tennessee.
